Lime and Rosewater Turkish Delight Recipe - Polka Dot Bride

Have I got a treat for you today? This recipe is a favourite of mine to make firstly because it looks so delightfully feminine and secondly because it is so delicious I can never stop at one piece. This Lime and Rosewater Turkish Delight Recipe takes only a few ingredients and follows a relatively simple process. Pillowy soft and sweet Turkish Delight with a hint of lime, this recipe would make beautiful looking wedding favours set out at each place, or become a welcomed addition to a dessert buffet. Or next time you're heading to afternoon tea with the girls, make a batch to take along. I'm certain it will be a hit - Turkish Delight is always appreciated!

You Will Need:
8 x leaves titanium-strength gelatine
190mL hot water
1 tablespoon lime juice
Zest of one lime
400g caster sugar

1/2 teaspoon rosewater (or rosewater essence)
1-2 drops pink food colouring

1 x 18cm square baking tray lined with baking paper and sprayed with oil

Step One. Pour hot water into a medium sized saucepan.

Step Two. Soak gelatine leaves in cold water until soft. Squeeze out excess water with your hands and add leaves to saucepan.

Step Three. Add sugar, rosewater, lime juice and food colouring to saucepan. Stir over low heat until sugar dissolves. Bring to the boil then reduce to a simmer. Simmer mixture for 5 minutes.

Step Four. Remove from heat and allow to cool to room temperature. Add lime zest and stir. Pour into the tray and refrigerate for 3-4 hours or until set.

Step Five. Combine icing sugar and cornflour. Dust half this mixture onto a chopping board. Slide jelly out onto the board and cut into cubes with a damp knife. Dust the remaining icing sugar mixture over the top and gently role each cube in the mixture until all sides are coated.


Hints & Tips:
>>To store, keep refrigerated in an airtight container for up to 2 weeks. Alternatively, if using as wedding favours you could place 6-8 pieces into a cellophane bag and refrigerate in the bags for up to a week.

>>If you do not have a small enough baking pan, us a larger one and make to the correct dimensions by trying a few different sized books, push them up against the baking paper to make the fourth side until you have the correct dimensions.
